Beets are a fantastic replacement for starchy potatoes. This healthy comfort food is packed with vitamins and minerals. Zero guilt here!

Why are beets so good for you?

Beets have many helpful plant compounds that reduce inflammation and protect cells from damage. Some of the other health benefits of beetroot include:

    • Increases Stamina -- Beetroot and its juice help your heart and lungs work better during exercise.
    • Helps Prevent Heart Disease and Stroke -- Beets are rich in folate (vitamin B9) which helps cells grow and function. Folate plays a key role in controlling damage to blood vessels.
    • Lowers Blood Pressure -- Beets are naturally high in nitrates, which are turned into nitric oxide in the body.
    • Boosts Your Immune System -- Beets are high in fiber and promote the growth of good bacteria in your gut.

Make sure when you cut the beets into strips they are somewhat similar in size so they bake up evenly. You don't want over-burnt fries, am I right?

These beautiful Beet Fries are baked, not fried, and so simple to make!

spicy Sriracha aioli in a bowl with red chili peppers

How to make the spicy aioli:

Only two ingredients are required for this delicious, spicy aioli! Could not be any easier, and it's so tasty!

    1. In a small bowl, whisk together the reduced-fat mayonnaise and sambal oelek.
    2. Serve on the side with the beet fries.

Want more healthy fries? You gotta try my Crispy Baked Sriracha Sweet Potato Fries. They're crispy and addictive with a touch of heat from the Sriracha seasoning.

    Tips & Tricks

    • Make sure when you cut the beets into strips they are somewhat similar in size so they bake up evenly. You don't want over-burnt fries, am I right?
    • Leave space on the baking sheet. They should not be overcrowded. Use two baking sheets if necessary!
    • Preheat your baking sheet. They will come out much crispier this way. (Little know fact!)
    • Toss them halfway into baking. Then the fries will get nice and brown on both sides!
    • These fries are baked and made from beets so they are not going to be as crispy as regular fries. But you can deep-fry them for extra crisp if you want!
    • Try air frying these beet fries. I think they would turn out just as crispy!
    • You can freeze the fries and reheat in the oven at 350 degrees for 15 minutes or until cooked through.

Crispy on the outside, tender on the inside, these Oven Baked Beet Fries are the perfect healthy side dish! Serve with a Spicy Aioli dipping sauce!

    • Total Time: 35
    • Yield: 4 1x

    Ingredients

    Units Scale
    • 4 medium red or golden beets (or 2 of each)
    • 1 tablespoon extra virgin olive oil
    • 1 teaspoon salt
    • ½ teaspoon ground pepper

    For the Aioli:

    • ½ cup reduced-fat mayonnaise
    • 1 tablespoon sambal oelek

    Instructions

    1. Preheat oven to 425 degrees. Place a large baking tray in the oven while it heats.
    2. Peel the beets. Cut into thick slices and cut them into ½-inch strips.
    3. In a large mixing bowl, toss the beet strips with the olive oil, salt and pepper to coat.
    4. When oven is preheated, remove the baking tray and spread the beet strips onto the tray in a single layer (do not overlap!). Bake for 15 minutes. Toss the beets and bake another 10 minutes. They should be nice and crispy. Bake longer if necessary. After removing from the oven, sprinkle the fries with a little more salt.
    5. To make the aioli dipping sauce: In a small bowl, whisk together the mayonnaise and sambal oelek. Serve on the side with the beet fries.
