    Gluten-Free TikTok Ramen

    Gluten-Free TikTok Ramen is my amped-up version of the viral "TikTok Ramen" dish, featuring gluten-free noodles, chopped kale, soft-boiled eggs, and Furikake seasoning! It's SO tasty!

    Tiktok ramen is a "soup-less" ramen, where you use instant ramen noodles without the seasoning packet, with a simple sauce. So... I figured I'd get in on the "TikTok Ramen" craze with my own version. This deconstructed Gluten-Free TikTok Ramen recipe is out of this world, and so easy to make! Don't worry if you're not on TikTok. You won't even know what you're missing when you taste my recipe! It's that good!

    This TikTok Ramen is saucy, sweet, garlicky, and full of umami flavor. Gluten-free ramen noodles are tossed in a spicy garlic butter sauce and topped off with a runny egg and Japanese Furikake seasoning.

    Ingredients in TikTok Ramen

    • Gluten-Free ramen noodles -- these noodles cook up very quickly. You'll want to cook them al dente so they continue to cook when you add them to your wok with the other ingredients. I used the Lotus Foods brand, made from millet and brown rice.
    • Butter -- you only need two teaspoons for sautéing and for richness.
    • Garlic -- because garlic is better with everything! I always add extra, because... garlic!
    • Red pepper flakes -- for a little heat. Add more than the recipe if you're a hot spice lover!
    • Gluten-free soy sauce -- I used Kikkoman gluten-free soy sauce for obvious reasons. You'd never know the difference!
    • Brown sugar -- for that touch of sweetness and to balance out the spice from the red pepper flakes.
    • Green onions -- to brighten the dish.
    • Baby kale -- for extra veggies and to incorporate some greens. Plus, I love kale!
    • Soft-boiled eggs – an egg on top because ramen isn’t ramen without an egg!
    • Furikake seasoning – a nutty, crunchy, umami-packed Japanese spice blend that's just perfect as a garnish on this ramen dish. I love Trader Joe's brand the best!

    So many great flavor combos in this easy ramen dish! You won't believe how quickly this recipe comes together -- perfect for a quick dinner!

    I used my trusty wok to make this ramen dish, easily stir-frying the butter, garlic, and red pepper flakes.

    Then, I threw in the gluten-free ramen noodles and all of the other ingredients, tossed well, and it was finished in no time!

    Furikake seasoning is a a nutty, crunchy, umami-packed Japanese blend typically used to season rice. The seasoning is a blend of seaweed, sesame seeds, and other spices. Just sprinkle it on top of the Gluten-Free TikTok Ramen when you're ready to serve!

    Tips and tricks

    • Not on a gluten-free diet? No worries. Just use the regular packets of instant ramen (without the seasoning packet).
    • Cook the gluten-free ramen noodles to al dente. They will continue to cook in the wok when you add it in with the other ingredients.
    • Add more soy sauce if you want it more saucy.
    • I threw in baby kale and green onions, but use whatever veggies you have on hand (ie., spinach) that you think will work in this ramen dish.
    • Leave off the egg if you're not a fan. Really? Who's not a fan of eggs?
    • In a pinch, if you don't have time to buy Furikake seasoning, you can use Everything Bagel seasoning. I picked up my Furikake seasoning at Trader Joe's. Don't have Everything Bagel seasoning? Use some toasted sesame seeds instead.

    Gluten-Free TikTok Ramen is my amped-up version of the viral "TikTok Ramen" dish, featuring gluten-free noodles, chopped kale, soft-boiled eggs, and Furikake seasoning! It's SO tasty!

    Ingredients

    Units Scale
    • 12 ounces (4 packs) gluten-free ramen noodles
    • 2 teaspoons butter (or ghee)
    • 4 large cloves garlic
    • 1 teaspoon red pepper flakes
    • ¼ cup gluten-free soy sauce
    • 1 tablespoon brown sugar
    • 4 green onions, sliced
    • 2 cups baby kale, chopped
    • 4 soft-boiled eggs, sliced in half
    • Furikake seasoning for garnish

    Instructions

    1. Cook the ramen to al dente in a large pot of boiling water, about 5 minutes, breaking up the noodles so they don't stick together. (The noodles will continue to cook when you add them into the sauce.) Drain noodles and set aside.
    2. Make the sauce: In a heavy wok or large frying pan, heat the butter over medium heat. Add the garlic and red pepper flakes and sauté until garlic is translucent and fragrant, about 2 minutes.
    3. Add in the soy sauce and brown sugar and stir well until the sugar has melted.
    4. Toss in the noodles, turn up the heat to medium-high, and add in the green onions and kale. Toss until well-combined. Continue to cook until the noodles are fried, about 5 minutes.
    5. To serve: Place the noodles at the bottom of the bowls. Top each bowl with two eggs slices and sprinkle with the Furikake seasoning. 

    Notes

      I'm not a TikTok user but I love the concept of this ramen recipe, throw away the seasoning packet and make your own sauce. Brilliant and I'm sure much better! On my to make list!

        I would never use that seasoning packet in ramen because of the preservatives. So, this is a healthier version. Plus, I added veggies and that ups the healthy factor. Hope you enjoy the recipe!
