    Air Fryer Vegan Avocado Egg Rolls

    Crispy on the outside, tender and delicious on the inside, these healthy, Air Fryer Vegan Avocado Egg Rolls have all the flavor, but none of the guilt. These homemade egg rolls are perfect for holiday entertaining!

    It's the holiday season and we know that means -- extra helpings, lots of high-calorie foods, and over-indulgence. OK, we get a pass because that's what we do during the holidays! But, why not serve some healthy food in the mix as well, like these crispy and delicious Air Fryer Vegan Avocado Egg Rolls? The Air Fryer is a real game-changer! This awesome appliance speeds up your cook time with no oil or deep frying. The outcome is always a healthier, less-caloric dish, like these vegan egg rolls. But you'd never know it!

    Ditch the take-out with these homemade egg rolls! You'll have fun making these! Egg rolls are so versatile too. You can pretty much stuff them with whatever mixture you can throw together. I used vegan egg roll wrappers, but regular egg roll wrappers work perfectly fine in this recipe.

    Here's another recipe that's perfect for the holidays! My Crispy Brie and Fig Spring Rolls are a delicious appetizer to serve before your big feast. These are not vegan, and are deep fried, so a bit more caloric than the air-fried rolls. They're sweet, savory, melty, and cheesy — a level-up delicious appetizer!

    Ingredients you'll need to make these vegan egg rolls

    Just nine ingredients are required to make these healthy Vegan Avocado Egg Rolls!

    • Ripe avocados
    • Red onion
    • Fresh lime juice
    • Sun dried tomatoes
    • Fresh cilantro
    • Vegan egg roll wrappers
    • Garlic powder
    • Onion powder
    • Salt & pepper

    Step-by-step instructions on how to make egg rolls

    If you've never folded an egg roll before, don't freak out! It's super easy! It's kind of like folding a burrito. Follow the instructions below for a foolproof, ready-to-be-air-fried egg roll!

    1. Prepare your mixture. Mash your avocados in a medium bowl. Then, stir in the finely-chopped sun dried tomatoes, onions, cilantro, and spices.
    2. Squeeze in the lime juice. This will not only give this mixture a tangy flavor, but will keep the avocado from getting brown.
    3. Get ready to roll! Lay out one sheet of the vegan egg roll wrappers on a flat surface.
    4. Grab your mixture. Take about one tablespoon of your avocado mixture and place in the corner of the egg roll wrapper.
    5. Here we go! Roll the corner over your filling and press gently to make it tight and firm.
    6. Fold like an envelope. Fold in your corners, like an envelope, and keep rolling until you’re near the last corner.
    7. Not done yet! Leave the last corner exposed.
    8. Brush with water. On the last corner, brush with a little water and close the wrapper. The water will help seal the egg roll.
    9. Repeat! Repeat the process until you have made eight uncooked egg rolls.

    The Air Fryer is a real game-changer! Make sure to spray the air fryer basket with cooking spray, and then space out your egg rolls (you will probably need to doing a second batch if your basket is small). Spray the tops of the egg rolls and cook at 350 degrees for 6-8 minutes. Make sure to flip the egg rolls halfway through cooking (and spray the tops) until golden brown and crispy!

    Can you believe these Vegan Avocado Egg Rolls were made in the air fryer? Look at that golden crust! One bite out of these homemade egg rolls and you'll never order these for takeout again!

    Tips and tricks

    • Have any leftover egg roll filling? This filling is great on its own as a dip. Consider it a guacamole and serve with your favorite chips!
    • You can find egg roll wrappers in the refrigerated produce section of your grocery store.
    • If you make these ahead of time, you can store these egg rolls in an air-tight container in the freezer for up to 3 months. To reheat, put back in the air fryer at 400 degrees spray with cooking spray, and cook for 2-3 minutes on each side.
    • I served some vegan sour cream on the side, but feel free to use whatever dip you like. Sweet chili sauce is always good for dipping!

    Crispy on the outside, tender and delicious on the inside, these healthy Air Fryer Vegan Avocado Egg Rolls have all the flavor, but none of the guilt. These homemade egg rolls are perfect for holiday entertaining!

    Ingredients

    Scale
    • 2 ripe avocados, peeled and pitted
    • ¼ red onion
    • ½ lime (juiced)
    • 4-6 sun dried tomatoes in oil
    • 1 tablespoon fresh cilantro (finely chopped)
    • ¼ teaspoon garlic powder
    • ¼ teaspoon onion powder
    • Salt and pepper, to taste
    • 8 vegan egg roll wrappers (I used Frieda, which is egg-free)
    • Cooking spray
    • Vegan sour cream (or your favorite dipping sauce)

    Instructions

    For the egg roll filling:

    1. In a medium-sized bowl, start by mashing your avocados. Then, finely chop your sun dried tomatoes and onions and add to the mashed avocados.
    2. Juice the lime and drizzle over your mashed avocados. Mix in all of your spices.
    3. Finely chop your cilantro and add to the avocado mixture, mixing until well-combined.

    Making the egg rolls:

    1. Lay one sheet of your vegan egg roll wrapper on a flat surface on the diagonal. Place about one tablespoon of the avocado filling on the corner nearest you.
    2. Roll the corner up and over your filling, pressing gently to make it tight and firm.
    3. Then fold in your corners, right then left, like an envelope, and keep rolling up until you’re near the top corner. Do not seal yet!
    4. Brush some water on the top corner and seal closed. The water will help seal the egg roll. Repeat until all 8 egg rolls are made.
    5. Spray the air fryer basket with cooking spray. Place the egg rolls in the air fryer, making sure they’re spaced apart and none of them are touching each other.
    6. Spray the tops of the egg rolls with the cooking spray and cook in the air fryer at 350 degrees for 6-8 minutes. Make sure to flip them over halfway through and spray the tops. Continue cooking until golden brown and crispy.
    7. Optional: Serve with a side of vegan sour cream, or your favorite dipping sauce.
