    Spooky Blue Pancakes

    Who's ready for Halloween? These fun-to-make Spooky Blue Pancakes, made with blue spirulina superfood powder, are just what you need to get you into the Halloween spirit!

    Halloween is my favorite holiday of the year! I plan my costume out months in advance. This year, sadly, we won't be going to my cousin's annual Halloween party because of the pandemic. 😢 But, that didn't stop me from getting into the spirit of things with these vibrant blue pancakes. The kiddos will have so much fun decorating them!

    Decorating ingredients for spooky blue pancakes

    Dig through your pantry! You'd be surprised what you've got on the shelves, unused and unseen for some time! Heres what I used but feel free to get creative:

    • Edible candy eyeballs that I got at my local Michael's craft store. These some in all different sizes.
    • Creepy black spiders, available just about everywhere this time of year. I got mine at Target. It's fun to decorate with these creepy crawlies.
    • Black decorating gel, to draw creepy faces, or whatever inspires you. Found this gel at my local Michael's craft store.
    • Fresh berries, great for making mouths and noses!

    I used Suncore Foods' Heroic Blue Pancake Supermix to make these Spooky Blue Pancakes. These are healthy pancakes made from blue spirulina extract powder, are plant-based, vegan, non GMO, preservative free, and contain no artificial colors. Guilt-free stacks for the family!

    Can you believe how vibrant this pancake mix is? The batter just needs water or milk before cooking in a griddle or frying pan.

    Flip your flap jacks after the batter starts to bubble (about 2-3 minutes). Remove to a plate and let the batch cool before cooking the next batch.

    Making creepy faces on these Spooky Blue Pancakes was fun, but creating a vibrant stack was fun too! FYI -- my crazy dog tried to attack these spiders 😂!

    What I used for the pancake stack

    • Fresh berries. Berries the perfect pairing with these Spooky Blue Pancakes. Look how colorful they are!
    • Creepy black spiders, available just about everywhere this time of year. It's fun to decorate with these creepy crawlies.
    • Black maple syrup for sweetness. I combined organic maple syrup with black decorating gel to create that creepy black drip. But don't let that scare you!

    Stack these Spooky Blue Pancakes high for effect! My family was eyeing these pancakes from Step 1! It was all I could do to control them from grabbing one off of the stack! Yikes!

    You can use this batter to make some waffles as well. Cook in a hot waffle iron according to the product's instructions.

    TIPS & TRICKS

    • If you don't want to use this healthy, blue pancake supermix, you can always add a few drops of blue food coloring to your regular pancake mix for that vibrant blue color.
    • If the batter starts to get too thick, add a tablespoon more of water or milk and mix well before cooking.
    • Feel free to get creative with the decorating. The kiddos will love to partake! It's a fun Halloween activity for the entire family.
    • Black syrup isn't mandatory, but it does make these Spooky Blue Pancakes a bit more frightening!
    • I don’t know about you, but we love breakfast for dinner! Serve these ghoulish pancakes for dinner before the kiddos go trick-or-treating. What a "treat!"

    Who's ready for Halloween? These Spooky Blue Pancakes, made with blue spirulina superfood powder, are just what you need to get you into the Halloween spirit!

    Ingredients

    Units Scale

    For the pancakes:

    • 3 cups Suncore Heroic Blue Pancake Supermix
    • 2 cups milk or water
    • Tablespoon canola oil or cooking spray

    For the syrup:

    • ¼ cup organic maple syrup
    • Tablespoon black decorating gel

    For decorating:

    • Edible candy eyeballs
    • Black decorating gel
    • Plastic black spiders
    • Fresh berries (blueberries, strawberries, blackberries, raspberries)

    Instructions

    1. In a large mixing bowl, combine the blue pancake powder with the water or milk. Stir gently with a whisk to blend thoroughly. Let the batter site for about 5 minutes to thicken.
    2. Heat the oil in a griddle or large frying pan (or spray the pan with cooking spray) over medium high heat. 
    3. Pour the batter into the pan by large tablespoons and cook until the batter starts to bubble (about 2-3 minutes). Flip the pancakes and continue to cooke for about 2 minutes more.
    4. Remove the pancakes to a plate and repeat with the rest of the batter.

    To make the black syrup: Whisk together the maple syrup and black decorating gel until well combined. Pour the syrup over the pancakes when ready to serve. Serve with fresh berries.

    To decorate the pancakes: Use your creativity to make scary faces on these pancakes using the candy eyeballs, decorating gel, and spiders, or whatever you have on hand! 

    Notes
