    Crispy Brie and Fig Spring Rolls

    Not your ordinary spring roll, these Crispy Brie and Fig Spring Rolls are sweet, savory, melty, and cheesy -- a level-up delicious appetizer!

    One of my favorite appetizers to make is baked brie with fig jam, so I decided to create an Asian-inspired spring roll using the same ingredients. Instead of baking the brie in a puff pastry, I used spring roll pastry wrappers and deep-fried them! These spring rolls turned out amazing!

    Look at that golden brown crispiness on these Brie and Fig Spring Rolls! The combo of creamy brie with the fig jam is to die for, and the brie just oozes with cheesy goodness after the first bite. OMG, so good!

    Creamy brie is the star in this crispy spring roll. The brie turns into melty goodness when fried inside the spring roll wrapper.

    How to fold these spring rolls:

    There are just three ingredients in these Crispy Brie and Fig Spring Rolls, making it so easy to assemble! Follow the instructions below and you'll be a spring roll pro in no time!

    STEP 1: Place a wedge of brie topped with a
    tablespoon of fig jam at the bottom corner of
    a square egg roll wrapper.

    STEP 2: Roll the wrapper up from the bottom until you the reach halfway point.

    STEP 3: Fold both sides over towards each other so it forms an envelope. Brush the top corner with the egg wash and fold down to seal.

    STEP 4: Roll the wrapper up towards the top corner, tucking the sides in along the way, and press to seal forming a beautiful spring roll!

    Fry the spring rolls in batches, in two to three inches of oil (I used grapeseed oil), for about two minutes on each side, until golden brown.

    Remove the spring rolls with a slotted spoon and place on paper towels to drain. Repeat with the next batch.

    These Crispy Brie and Fig Spring Rolls are just about the most perfect appetizer! Now you can make these in your own kitchen too!

    Tips & Tricks

    • While you're assembling the spring rolls, keep the spring roll wrappers covered so they don't dry out.
    • I used spring roll pastry wrappers, but you can also use egg roll wrappers to make this recipe.
    • Roll the spring rolls very tightly so none of the filling falls out during the frying process. (See step-by-step rolling instructions above.)
    • Fry the spring rolls in small batches making sure not to overcrowd the pan so they cook evenly.
    • You can freeze these spring rolls before frying to use at a later date. When you're ready to use, simply drop the frozen spring rolls into the hot oil!

    Not your ordinary spring roll, these Crispy Brie and Fig Spring Rolls are sweet, savory, melty, and cheesy -- a level-up delicious appetizer!

    Ingredients

    Scale
    • 8 (8-inch square) spring roll pastry wrappers (or egg roll wrappers)
    • 8 ounces creamy brie, cut into 4-inch wedges
    • 5 ounces fig jam
    • 1 egg, slightly beaten
    • Grapeseed oil for frying

    Instructions

    1. Place a wonton wrapper on top of a flat surface. Place a wedge of brie topped with a tablespoon of fig jam at bottom corner of the egg roll wrapper.
    2. Roll the wrapper up from the bottom (like a burrito) until you reach the halfway point.
    3. Fold both sides over towards each other so it forms an envelop. Brush the top corner with the egg wash and fold down to seal.
    4. Roll the wrapper up towards the top corner, tucking the sides tightly along the way, and press to seal forming a beautiful spring roll.
    5. Heat the oil in a wok or small pot to medium high heat. Test a small piece of  wrapper to see if oil is hot enough (it should be bubbling).
    6. Place no more than three spring rolls into the hot oil. Fry for about 2 minutes on each side (until golden brown). Repeat in small batches.
    7. Remove the spring rolls with a slotted spoon. Place them onto a tray lined with paper towels to drain. Serve while hot!

    Notes

    • While you're assembling the spring rolls, keep the spring roll wrappers covered so they don't dry out.
    • I used spring roll pastry wrappers, but you can also use egg roll wrappers to make this recipe.
