    Baby Bok Choy with Ginger and Garlic

    This beautiful side dish, Baby Bok Choy with Ginger and Garlic, is loaded with nutrients and antioxidants. It's a superfood that's quick and easy and so delicious! Baby bok choy is a crispy, colorful accompaniment to most Asian entrees.

    Baby bok choy is ranked one of the world's healthiest foods with 70 antioxidants, and it's loaded with Vitamin A. Not only that, but it tastes really good! You'll feel healthy just reading this recipe!

    How to make Baby Bok Choy with Ginger and Garlic:

    This side dish takes only about 10 minutes from start to finish! Grab your wok and get started!

    1. Combine soy sauce, brown sugar, corn starch, and water in a small bowl. Stir well and set aside. Heat oil in a heavy wok on medium-high. Add garlic, ginger, and red pepper flakes. Cook until fragrant, about 1 minute.
    2. Add baby bok choy and stir fry until tender, about 4 minutes. Stir in the soy sauce mixture and cook another 1 minute.
    3. Toss in the green onions and sprinkle with toasted sesame seeds.

    Rinse the baby bok choy, cut off the thick ends and slice them in half.

    Stir-fry the baby bok choy with garlic and ginger and toss in the sauce. That's it!

    Sprinkle the baby bok choy with more red pepper flakes, sliced green onions, and toasted sesame seeds.

    TIPS & TRICKS:

    • Buy the baby bok choy fresh and use it right away. Trader Joe's always carries packages of baby bok choy. Or, check your local Asian market.
    • If you can't find baby bok choy, you can always use regular bok choy. I like that the baby bok choy is just the right size for stir-frying in my wok.
    • To toast the sesame seeds: Place in a skillet on the stove over medium heat and dry toast it until light brown. Don’t overcook.

    Ingredients

    • 2 tablespoons reduced-sodium soy sauce (or coconut aminos)
    • 1 tablespoon dark brown sugar
    • 1 ½ teaspoons corn starch
    • 1 tablespoon water
    • 2 tablespoons canola oil
    • 3 cloves garlic, minced
    • 2 tablespoons fresh ginger, grated
    • 1 teaspoon red pepper flakes
    • 2 pounds baby bok choy, sliced in half lengthwise
    • 3 green onions, chopped
    • 1 teaspoon toasted sesame seeds

    Instructions

      This was absolutely delicious! My husband loved it! Thank you for sharing! I also used the same ingredients for a stir fry tofu. Essentially, rice, bok choy, tofu meal.

      It is indeed very nice, and I can imagine how flavorful it is when you add both garlic and ginger to it. One of the easiest dishes to make, yet one of the most flavorful ones, too.

      bok choy is my favorite Asian vegetable and I love simple preparations like this. I often just saute it with ginger, garlic and Oyster sauce. but next time I will try this preparation

      Simple cooking at its best! Love bok choy. It's definitely a vegetable we consume a lot. I like frying mine in sesame oil. It is so fragrant when we do. Love the addition of the sesame seeds!
